- Get 500 gm mutton
- Take 1/4 cup mustard oil
- Prepare 1/2 onion,finely chopped

- Make ready 1.5 tsp kashmiri red chilli powder

- Get 10-12 curry leaves

- Get pickle spices (dry roast until the aroma is released. grind to a slightly coarser than fine powder)
- Take 1 tsp black mustard seeds
- Take 1 tsp cumin seeds
- Take 1 tsp fennel seeds
- Make ready 1/2 tsp fenugreek seeds
- Make ready 2 cloves
- Get 1/2 tsp nigella seede
- Prepare 4 dry red chillies
- Get 1/2 tsp carom seeds
- Take 1/2 tsp aniseed
- Make ready 1/2 tsp whole black pepper
Achari gosht or achari mutton is a wonderful yet rare awadhi cuisine of uttar pradesh which is cooked with mutton bringing out pickled flavors or achari flavors into it. Achari means 'pickled' in Hindi, and achari lamb is a classic curry that melds sweet and tart components magnificently for a festival of flavour in the mouth. You may have also heard of it being called 'achari gosht'. METHOD: In a dish whisk the plain yogurt with one liter of water.
Steps to make Achari Gosht:
- In a wide bottomed, nonstick pan, heat the mustard oil to smoking point. Turn off and let cool completely.
- In a bowl mix together yogurt,warter,salt,brown sugar,kashmiri red chilli powder and turmeric powder.
- Place the pan with the cooled mustard oil on medium heat.Add asafoetida and onions.Saute and cook until onions turn brown.
- Add curry leaves,ginger paste,garlic paste,green chillies and ground pickle spices.Saute for 5 minutes.
- Add mutton and saute on high heat until mutton starts to turn brown.
- Turn heat to simmer, add the yogurt-spiced water,cover with a tight fitting lid and cook until mutton is 3/4 done.
- Add the chopped tomatoes, mix through,cover and cook until mutton is tender and cooked through.
- Remove lid,increase heat to high and cook until all the water has dried up and the desired consistency is reached.
- Add a dash of lemon juice.
- Remove to a serving dish,garnish with chopped coriander leaves and serve hot along with Indian flatbread.

Add to the oil: the ginger paste, garlic paste, onion puree, cloves, mustard seeds, cumin seeds, nigella seeds, fenugreek seeds and aniseeds.
