  18. Take Tomatoes 300gms purée
  19. Make ready Green chillies 3 slit lengthwise
  20. Take 1 1/2 tsp Ginger paste
  21. Take 1 1/2 tsp Garlic paste
  22. Get 6 Green cardamom
  23. Make ready Cloves 6
  24. Get Cinnamon stick 3” piece
  25. Take Bay leaf 2
  26. Make ready 2 1/2 tsp Kashmiri red chilli powder
  27. Get 4 tbsp Yoghurt
  28. Make ready 125 ml Oil
  29. Prepare Mint leaves 1 handful
  30. Make ready Coriander leaves 1 cup lightly stuffed and chopped
  31. Take Water 2 cups + 2 cups
  32. Get to taste Salt
  33. Get Sutriyan/rice pasta
  34. Make ready 2 1/2 cups Rice flour
  35. Make ready 2 1/2 cups Water
  36. Get 2 tsp Salt
  37. Get 1 tbsp Oil

I've made it with chicken but you can easily substitute the chicken with muttton (goat meat). The remaining ingredients and the cooking process remains the same irrespective. Sutriyan is a special delicacy often prepared in Ambur. It is a main dish that does not need any accompaniments or side dishes.

Steps to make Sutriyan:

It differs from the Hyderabadi Sutriyan which is made with chapathis. Sutriyan is basically handmade rice flour pasta cooked in a spicy non vegetarian gravy. It can be made with chicken or mutton pieces or even minced. Sutriyan are made from the bread that bawarchis use while giving dum to the biryani. But, that bread is available to you only if you held a party or a function at home and if you made Hyderabadi Biryani in it.
