A freshly ground masala in the curry always makes it better and delicious. The base of the curry has tomato and onions which are flavored with the freshly ground masala and other everyday spices.

- For masala of chhole÷first take approximately 5 tbsp oil and roast cumin seeds+ginger+garlic+green chilli.make them brown
- Now add sliced onion and cook it to make golden.now add all the spices together and cook at medium flame.cook for 7 to 8 minutes
- Now add tomatoes and cook by covering at low medium flame.cook until tomatoes get softened and totally mix with all
- Boil otherside beans.lets strain all the water and keep for after use.now boil 2 glass around water and add chaipatti.add this water to beans and boil them.after 5 to 6 whistle it will ready
- Mix masala ready in boiled beans Nd cook by covering to mix all well.sprinkle some ginger sliced and serve with poori.
