  17. Prepare Half cup sunflower oil

It is little messy to roast on flame. Starting with this recipe of Mango chutney in late February to the ripe mango curry with fish in May. Instructions to make Raw mango chutney:
  1. First dry roast all the seeds and separate dry roast spices too.take out separately in different bowls
  2. Grate finely raw mango and make small pieces of jaggery.
  3. Remember I prefer jaggery so for one mango chutney 3 to 4 small pieces of jaggery crushed needed.
  4. Make oil hot in same pan and put roasted seeds and spices together.again cook for 2 minutes
  5. Now add grated mango and jaggery powder or sugar and cook at low flame.keep mixing well until jaggery start melting
  6. Just keep cooking to dry the whole water come from mango and jaggery or sugar.now add kalonji and vinegar
  7. Enjoy yumm chutney.stay safe stay
